Extra Virgin Olive Oil

All begins when olives start to turn a dark colour, from green to purple, a rainbow of emotions between pistachio green and pink.
The signal gives the go-ahead to a dance of arms and nets which encircle the olive trees one by one. An automatic rake helps us to bring down the olives into the nets, movements are careful and delicate, taking care not to tread olives along the ground.
One by one olive trees free themselves of their small fruit: the olives are collected and cleaned of leaves and little branches.
The same day, at the end of the evening, olives are brought to the oil mill and pressed so as to preserve their organoleptic properties. Then the oil remains in steel tanks under nitrogen until it is bottled.
